Good stuff. I made 10 lbs of venison Summer Sausage using this seasoning, 7.5 lbs venison and 1.5 lbs pork fat trimmings. I stuffed it in collagen casings and smoked it to an internal temp of 160. It turned out great. I will definitely use it again.
